Sewing, sewing, and some knitting....

So I haven't been updating a lot, but I have been being rather crafty:D
I am still addicted to knitting, but I have been doing a lot of sewing. I can't share all of it right now but will when I am all done;)
Anika is still staying crafty as well, she is still knitting some, although she doesn't like to do it for very long, it only holds her attention for a bit. She has started to learn some basic stitches for hand stitching/embroidery. She can do shorter projects and it holds her attention longer.
I am working on a knitted stocking cap for Nathaniel. He keeps begging me to get done with it... but I am still learning a lot of the techniques:O I am knitting it in the round with circular needles. The ones I bought were too big for the basic circular method, so I am using a method called "magic loop". I love it! Basically I can buy less sizes of circular needles because I don't really have to worry about the length of the cable:D I am starting the decrease right, hopefully I will have it done in a week or two.
Since I am still full into knitting, yet sewing almost daily, I decided to whip up a little needle case. It was fast, easy and cost about $4 to make, and I have some of the fabric left over for another project! I used a basic template I found online, but changed the way I did the tie, because I didn't want to have to stitch in the middle of the bag.

Oh and the best thing to knit, especially for a beginner.... I love these I have already made a few and have more yarn sitting around just for then:D

Crafting... and more!

I have had such a great time making cards. I haven't been very good about taking pictures before sending them out but I got some pics of the wedding card I made for my sister before I getting it off.


And actually I sent it off, but at the last minute, the afternoon before the wedding I flew to Arkansas and was able to give her the card and gift myself! It was a fast trip but I had a lot of fun and Nathaniel actually had a good time being alone with the girls for the weekend. Yes he stayed home from Friday till Monday with girls, they had a picnic and they went to the Pirate Museum, arghh matey!


Thanks so much to my hubby and my parents for making it possible for me to be there! I would of regretted it forever if I wouldn't of been able to be there!

Knitting, oh no.... oh yes!

So Anika has been wanting to learn to knit, since one day she saw a girl about a year older than her knitting away in the grocery store. I told her we would wait till she was a little older, I told her 8... well she turned 8 last month:O And her gift was knitting needles, yarn, and a book.

I don't(didn't) knit and so I of course had to learn so I could help her. Needless to say I just can't put the needles down. I tried really hard to fight it, I told Nathaniel everyday, I don't want to knit why am I doing this. Not that I really didn't want to knit it's just do I need another hobby? Probably not, since I am a huge procrastinator and I have a ton of other hobbies, all with countless unfinished projects:O
But it hypnotic and fast and easy in the since that you can take it with you at all times... not so with machine sewing or scrap booking. I can sit outside and do it, I can watch TV, I can ride in the car, I even knitted while on the plane:O
No official finished projects, I have made a lot of swatches to determine gauge and I have made a few dish clothes. I will post a picture of a completed project as soon as I finish one, because like my true nature, I currently have 3 different projects on 3 different sets of needles.
And yes Anika is knitting, not as much as me. She says "It's all the same just over and over again", yes that is knitting, row after row, over and over again!

Baby Shower Invites

So I have been busy and/or sick so I haven't had a chance to post a lot. But my sis is expecting her first in August and I am helping to throw the baby shower, from afar though. She lives in Arkansas and my mom is going to be throwing the baby shower but I am helping out with some of the details. So one thing I am doing, or did! is make the invites. I had a lot of problems and these aren't the original ones but I like these more:D


So now I know there is another craft/hobby I love! I loved making these cards, and I have already made some Thank You cards too:D

Torn up Jeans to Ruffle Skirt

A little country girl, that is what Nathaniel thinks the skirt looks like. Yeah it does remind me of those little country style skirts, but this is way cuter ;).
So Anika tears up all her jeans, she can own a pair of jeans for less than 2 weeks and they will have holes in the knees. So I can't really keep too many for hand me downs or donate them. We have used them for play jeans and cut up some for misc crafts. But I have been wanting to turn some into skirts for about a year now, and finally did. I made two of them but the first was really a practice one, because I wasn't sure how ruffly I wanted it. Well the first was a bit too ruffly and so I don't have any pictures of it, but the second turned out cute! The great thing is it took me only about an hour from start to finish and if you have the jeans already you only need about 1/8 yard of fabric for each ruffle, I used two ruffles. So cheap fabric from Joann and the skirt cost about $2:O The cost alone makes it worth it! I will be making at least 4 more in the future, so expect some more pics!


I made the headband to match, it's reversible also with two different prints. This was made with Velcro, but I am going to make another with and elastic band. The Velcro was to hard to keep on and for Sydney to put back on herself. And we lost it already... she wore it for about half a day and then when we got home, it was missing.

Where does the time go?

Seriously where does it all go?
We have all been adjusting to NC really well and all keeping super busy. Between Anika's Girl Scout cookies, Sydney's preschool activities, and Neela being super goofy, I can't even keep tract of the time:O
We have done some really fun crafts as soon as I get the pics uploaded I will post:D But in the mean time I will show off the curtains I made for Anika's room!


I wanted something girlie and somewhat "fancy". So I wanted an upholstered cornice and then long thick drapes under. But it took me forever to find the fabric I thought I wanted so I changed my mind on the colors, picked something out and went from there. I couldn't get enough fabric to do what I had in mind, but I did save some money and it still turned out fine!
Nathaniel built the cornice, it took about an hour! I had the fabric sitting around for weeks but he got his part finished in one day and so I finished my part the next:D Anika likes it and now her room stays super dark in the morning, I am hoping she might start sleeping in because of it!
I also took some of the fabric and covered a cork board to match. I originally wanted to do a matching duvet cover and some big puffy pillows, but since I can't get more of the one fabric(cheap enough that is) I am not sure what we will pick for the bedding.

Oh and Neela begged me to take her picture too, "not just Anika's room".

Trip to FL

So over the winter break we didn't have much of anything planned, except to surprise our friend Kristin on her 29th birthday which was on the 29th of December. Her husband through her a sorta surprise party and we were supposed to surprise her at her house before the party.
Our trip there was a little rough so we didn't show up when we wanted to but we did make it for cake at the party!
We had a lot of fun, the girls loved staying at the Norman's and having a sleepover with Lily:D(except when it was actually time to sleep!).

So we really tried hard to get all the girls to pose together... you can see from this one it didn't work out well. But this picture sure does make you laugh.... or at least us moms are laughing about it!


What else do you do in FL... look for gators. We told the girls there were alligators in the water. Neela wanted us to find one.


Neela is afraid of nothing. Neela is in the front and Sydney and Lily are trying to catch up. They all made it up but the most complaints about how hard it was came from Sydney and Lily....those silly girlie girls!

Shopping Day Thank You!!

Since we don't live close to family the girls usually get gifts mailed or money/gift cards. This year they got some gifts but mainly money and gift cards! So we had a full, full day of shopping!
Neela was pretty confused, she was trying to decide which items to get at the store and we told her she could get more than one thing and even 3 or 4 or more she didn't know what to do! Then after she thought she had figured it out she just started tossing everything in the cart! We help her pick out the best toys from what she had picked and we even managed to have some money left over to put in her piggy bank!
Sydney had a couple items in mind. One is this dinosaur robot thing, every store was out so we have to order it but she is excited that someone is mailing it to her! She managed to get about 4 toys and a craft and she too still managed to have some money left over for a rainy day:D
Anika has known since before getting the gift that she was getting some money so she was saving up for a DS Lite, she had a DS that Uncle Nick had given her a few years ago, but hasn't been working right for a while and the hinge broke. Plus she wanted the smaller sleeker one! Every store we went to and called were all out. Anika got a little upset that her sisters were getting items from all the stores and she was waiting to find her new toy. She almost broke down and bought some smaller items but we talked to her and promised we would find one for here within a few days and that she still had some presents at home for Hanukkah. I started calling around and we found one! When we went to the Gamespot to pick it up, Anika got even better news it was the pink one!!! Anika had a few dollars left over but decided to buy this cute little robot that talks to her alarm clock that we had gotten her for one of her Hanukkah presents.
Anyways they are up this morning playing with all their new toys and robots:D Thank you to Grandma and Papa Brown, Grandma and Grandpa Bell, Great Grandma and Grandpa Stewart, and Aunt Catrina and Jason! The girls had a blast shopping! Oh and Thanks to Uncle Nick they love their new Mario Party:D
**I had typed this a week ago, but saved it until I put the pictures in, well I forgot till this morning:O

So here is the bookcase, and yeah it only took a day to fill it up! Now we need another one!




We did get the girls table done also. They love it. Neela constantly wants to serve us treats up there and Sydney is so happy to have a spot of her own to do all her puzzles!

Recipes, late, but as promised!

We had a great relaxing weekend. Saturday was pretty uneventful, the girls played outside most of the day, and then went on a walk with daddy to a pond that had ducks and they found wood that had been chewed on by beavers! Anika loved it:D
Today we went to our first Hanukkah party of the season, the girls did crafts and had their faces painted, and we ate lots of latkes...and yes they were super yummy!
I don't have pictures of anything, we were lazy!
Since I don't have photos, and I just happen to baking while blogging(is that dangerous?). I will put up a couple recipes I have been promising some of you.

Heidi's Perfect Pumpkin Pie
(I didn't give it this title my grandma did and I didn't make the recipe but it just so happens that lady that did is also named Heidi) you can find more of her recipes at 101cookbooks.com ***You can also easily make this pumpkin pie egg free by replacing the eggs with egg substitute or adding some soy milk mixed with tapoica flour(about 4 TBS soy milk and a TBS of tapoica flour) another option would be using about 5TBS of silken tofu. Depending of the method used to make it egg free you may need to let it sit longer to get the texture set.

1 pie crust (of your choice)
2 cups hazelnuts (divided) , toasted
1/2 cup brown sugar
1 tablespoon pumpkin pie spice blend*
1 teaspoon salt
1 tablespoon arrowroot (or cornstarch)
1 1/2 cups of roasted pumpkin puree*
1 teaspoon vanilla extract
3 extra large eggs PLUS one for glaze, lightly beaten
1 cup coconut milk

Preheat oven to 350 degrees, racks in the middle.

Puree 1 1/2 cups of the toasted hazelnuts in a food processor until they turn into a hazelnut paste, past the 'crumble' stage. Set aside. Chop the remaining 1/2 cup of hazelnuts and set aside seperately, these will be sprinkled on top after the pie is baked.

To make the pumpkin pie filling, whisk together the brown sugar, pumpkin pie spice blend, salt, and arrowroot. Stir in the pumpkin puree, and vanilla. Now stir in the eggs and coconut milk until just combined. Set aside.

Before filling the pie crust, crumble the hazelnut paste on top of the pie dough into the pie plate, quickly and gently press it into a thin layer across the bottom creating a layer of hazlenuts that will sit between the dough and the filling. Using the last egg gently brush the decorative edges of the pie dough. Use a fork to prick the pie dough a few times to prevent air bubbles. Fill the pie crust with the filling and bake for about 50 minutes - the center of the pie should just barely jiggle when you move the pie - the edges should be set.

Let the pie cool a bit, this makes slicing less messy. Serve straight or with a dollop of bourbon-spiked, sweetenend whipped cream or creme fraiche, and a sprinkling of chopped hazelnuts.

Makes one 9 or 10-inch pie.

*Pumpkin Spice Blend
1 tablespoon freshly ground cassia cinnamon
3/4 teaspoon freshly ground allspice
scant 1/2 teaspoon freshly ground cloves
1 1/2 teaspoons ground ginger (pre ground)

Use a coffee grinder to separately grind each of the following: cinnamon, allspice, and cloves. Smash the cinnamon a bit before grinding it. The spices should be powder-fine, and sifted into a bowl together. Stir in the ground ginger, and use in any recipe calling for a pumpkin pie spice blend.

*Roasted Pumpkin Puree

1 3 lb. sugar pie pumpkin
2 tablespoons olive oil
salt

Preheat oven to 400 degrees. Carefully cut the pumpkin into four big wedges - get rid of the stem. Scoop out the seeds and pulp (you can toast the seeds if you like), drizzle then rub the pumpkin wedges with olive oil, sprinkle generously with salt, and then bake on a baking sheet (middle rack) until tender throughout - about an hour. Scoop flesh out of the skins and puree with a hand blender or mash well by hand.


Semi Healthier Banana Muffins
Okay so this two recipes I put together to come up with the flavor I wanted in a banana muffin. These have a lot of banana flavor and I say semi healthier because they do have quite a bit of sugar in them. But they have no oil or butter, and have flax seed in them. And I promise they are still yummy!

3 ripened bananas mashed
3 TBS soy milk, rice milk, or milk
1 TBS whole ground flax seed meal
2 cups unbleached all purpose flour
1 tsp salt
1 tsp baking soda
3/4 cup white sugar

Preheat oven to 350 and spray or grease muffin tin or line with paper.
Whisk the soy milk with the flax seed. Add the mashed bananas. In a separate bowl mix/sift the flour, salt, baking soda, and sugar. Then add the dry ingredients to the banana mixture and stir with large spoon until blended.
Put the mixture into prepared muffin cups.
Bake for 20-25 minutes, or until toothpick comes out clean.
*These also work great in mini muffin pans just reduce time by half. And that is how I am making them right now the girls love taking them for snacks to school!

Chocolate Chip Cookie, Dough!!
Why dough in the title... because you can eat the dough and eat it with kiddos without worrying about salmonella! This is about 3 recipes combined to make my favorite style of chocolate chip cookies, ones that have oatmeal and that I can eat the dough! And if you are needing Vegan Cookies these are the best:D The dough also stores well. I usually bake about half of them and then refrigerate the other half to bake later. But I must give a warning if you put these in the fridge with plans to bake later they may never make it to the oven!
**If you are making these cookies Vegan make sure you use all vegan ingredients.

3/4 cup shortening (you can use non hydrated shortening but make sure the dough stays chilled or the cookies flatten out a little too much)
1/4 cup margarine
3/4 cup packed brown sugar
3/4 cup white sugar
2 TBS flax seed
6 TBS soymilk
1 1/2 cups all purpose unbleached flour
1 tsp baking soda
1 tsp salt
2 cups rolled oats
1-2 cups chocolate chips

Preheat oven to 350.
In a large bowl cream shortening, margarine, brown sugar and white sugar. In a small bowl whisk the soymilk and flax seed well. Add the flax seed mixture to the sugar mixture and mix well(I use a hand mixer).
In another bowl mix the flour, baking soda, salt, and then stir into the creamed mixture.
Stir in the oatmeal and chocolate chips until mixed well.
Drop by teaspoonfuls onto greased cookie sheet. Bake in preheated oven for 10-15 minutes.

Anika's Desk and this Weekend

So we finally got the desk in Anika's room! She is sooooo proud of it and she is so happy to have it! Now we just gotta organize her room a little more and her room will be done.
I have pics but they aren't the best. Once her room is done we will take some better ones.
So the desk is an old door and post we had from the girl's old bunk bed. Everything together cost about $14 or less to make. We had to actually cut the door down on both the width and the length because it looked too big in the room at the size it was. We put shelves up above(still need one more on top), we have a cork board to hang up in front, Anika wants a pink lamp or desk light, and then we just gotta get a chair for the desk. She is using a stool now from the kitchen but it is a little too tall, but we may cut it and then paint it white if we can't find anything else we like.


Nathaniel also finished repainting the huge old metal bookcase we bought. He had to take it all apart, clean it, and get rid of some of the rust. He actually had to file off a few of the bolts because they were so rusted. I didn't think of taking before pics so the only ones I have are after it is already apart. We finished painting it and just put it together last night. I will take some photos and upload them later.













We finally got around to taking pictures to put on the holiday cards and I actually did the layout and ordered the cards all on the same day:O So I will be sending those out in a few days but in the mean time here is one of the pictures we took!

It's Thursday and the week is almost done...

So I don't really have much to write today, middle of the week and nothing too exciting is going on! Syd started at her preschool this Tuesday and loves it, she acts like it's no big deal and like she has been there forever:D
I wanted to start posting some of my digital scrapbook pages so I can get some feedback and just show off my super cute girls;) So I think Thursdays are the best days, since I probably won't have much of anything to write about in the middle of the week. I don't have any since we have moved so until I do I will just put up some random older ones.

Thanksgiving... and yes we still had plenty to eat!!

Happy (late) Thanksgiving to everyone and hope you had a great time with family and/or friends! We often get asked, especially on Thanksgiving, what do you eat. Well let's just say we still had plenty to eat, and it's great because the meat isn't the center of the dinner So we get to experiment more and have more of those yummy sides! Oh and I made the most yummy pumpkin pie!! I will put up the recipe later in another blog!



We had a super long weekend, everyone was off of work and school for 4 days so we not only had a nice Thanksgiving. But we had a great weekend and a lot of time to get a lot of stuff done around the house.
We raked leaves two of the days. I don't think anyone who has lived here before really raked the leaves. We have 5 bags and about 7-10 more to fill!! And we have about a truck load of branches/trimmings to load up:D




Nathaniel also had time to work on the desk for Anika's room and on the table for Syd and Neela's room. I don't have pics of the finished items but let me tell you they turned out exactly like we wanted and we got away with making them super cheap! I will put of pics of them done later with the list of items and how we made them! But I do have a picture of Nathaniel being a super manly man working hard in the garage.... :D




Oh and one last thing.... we got a chance to walk around the UNC campus. It is beautiful in the fall, especially with our girls walking around it:D

Move to NC

Traveling with the cats was easy! Way easier than expected, except we had to take them out of the carriers at the airport which totally freaked them out:O and us!
The best part about the hotel was the empty indoor pool! Every time we went swimming we were the only ones at the pool, and the girls loved it!
The girls already found their favorite spots in the house! One of them being the back windows, where they can watch the squirrels raid all of the bird feeders.
